Most commonly agar is used, but to be honest agar has poor flavor release and texture compared to some other gelling agents. One thing I love about this method is the ability to use any gelling agent. However it will make beautiful solid spheres. So if you are looking to make spheres that burst when you eat them, this is not the method to do so. The one downfall of this method is you will never have spheres that have a liquid center. These spheres will become waterlogged if you attempt to store them in a water based liquid, so just stick with oil, trust me. If you want you can store the pearls in a flavored or unrefined oil. Be sure to use refined oil for forming the spheres, do not attempt to use olive oil or it will solidify when you pop it in the freezer. Here are a few tips and tricks to help you make cold oil spherification. They could also be mixed into a warm sauce to give a rather striking appearance. These spheres can be mixed into cocktails, after a rinse to remove any excess oil. This isn’t necessarily a worse method, just different in the end result. They differ from sodium alginate spheres because you will never have a liquid center. Chill the oil and begin making the spheres. You use the gelling agent, in this case it is agar. How this differs from sodium alginate spheres is there is no need for a second ingredient. When the droplets hit the cold oil they will solidify due to the temperature change. You will then need to heat it up to a boil before dropping little droplets into a container of ice cold oil. Cold oil spherification is where you take a gelling agent (most commonly agar) and add it to your flavorful liquid. The method of spherification that is known as “cold oil” spherification is quite different than the method used for traditional spherification. But the spheres made from agar are only similar to the spheres made with sodium alginate in that they are spherical. The answer to the question above technically is yes. “Can’t you just use agar to make spheres?” Cold as Ice So it’s not uncommon for us to get the question in our inboxes This type of spherification contains no calcium or sodium alginate. But there is another type of spherification that is popular and we get many questions about it. There are a few different types of spherification that you can make. If you do not buffer the acidity the spheres will not form. You will have to buffer the acidity by using sodium citrate. You want the ph to be above 4pH, if the liquid is not above a 4 on the pH scale traditional spherification will not work. This can easily be done with litmus test strips or a pH meter. So a the first lesson is measure the pH of your flavorful liquid. For instance acidity can ruin your day when you first get into spherification. But the method is one that has many little intricacies that can be frustrating. In a sense spheres are simple as they are just small pockets of flavor that you add to a dish for an exciting pop of flavor. Remember, there are many ways to achieve similar results when you are processing images. This is a new edit, but this is the exact process I used to create “Seedling”. The resulting image is not identical to “Seedling”. In this case, I made some final Curves adjustments to this layer to get the contrast and brightness to be as I wanted it. Create a new layer (Layer 4) with all adjustments so far: Select -> All Edit -> Copy Merged Edit -> Paste. There are so many different ways to work with adjusting colour, it really doesn’t matter which one you use, as long as the final image is what you had in mind!Ħ. I used 2 copies of the colour layer, applied a violet filter to increase the pinks and tone down the greens in one, and brought back the greens with the second one by masking the green channel only. Set blending mode on Layer 3 to “Color”, and blur the layer using Gaussian Blur (at Radius 40)įor this next part, you can use whatever method you prefer to adjust the colors until they look right. Over-saturate Layer 3: Image -> Adjustments -> Hue/Saturation -> Leave all as is, except move middle slider (Saturation) to +100ĥ. Clear the selection, effectively leaving all but shadows in Layer 3: Edit -> Clear and then Command + D.Ĥ. Create a copy of the adjusted Layer 2 (Layer 3), and select shadows in this new layer: Select -> Color Range … -> Select Shadows, Fuzziness 100%, Range 0 -> Hit “OK”ģ. Create a copy layer to work on (Layer 2), and apply auto curves to this copy layer: Image -> Adjustments -> Curves -> Options -> Enhance Brightness and ContrastĢ. I liked the right-hand side of the image, and I liked the many colors I could see throughout the lighter parts of the image, in spite of it being so dark.įirst, I decided to crop to a square, and rotate a bit to get the angle I wanted:ġ. I opened the image in PSCC without any Camera RAW adjustments. However, I decided to use the dark (underexposed) image by itself. The image was intentionally underexposed by 2 full f/stops as part of a series of 3 bracketed images to possibly combine in HDR software. The light was from sunshine through a window, creating a backlight for the seedling. The seedling was sprayed with water in a vase, and I captured it at ISO 100, f/5.6, 1/800 sec. I shot this image on a Nikon D7000, using my macro lens-the Sigma 150mm f/2.8, without filters and flash. It is this combination of the sliver of sharpness with all the colorful circular blurs that “makes” the photo. There is just a sliver of sharpness throughout the photo-the rest is all blur. The focal plane in the image is very shallow. They vary in size, with the smaller circles being closer to the focal plane, and the larger ones further away. These circles are out-of-focus points of light. For this tutorial, “bokeh” refers to the light circles in the image. |
